Mudpie Bars - Vegan Snicker Bars

Missing that chewy caramel with chocolate and peanut overtones and a hint of vanilla ? Scrumptious "suitable for all diets" alternative to regular store bought candy bars. RECIPE Mudpie Bars Vegan 1 Cup Rice Syrup 1 Tsp Vanilla 2 Tablespoons Smooth Peanut Butter 4 Cups Rice Crispies 1 Cup Chopped Almonds (or Pecans, Walnuts, Brazils) 200 grams Dark Chocolate Chips 1 Cup Smooth Peanut Butter Method 1. Melt Chocolate and 1 Cup of Peanut Butter in glass bowl 2. Bring rice syrup to boil, stir in vanilla and 2 tablespoons peanut butter and whisk until smooth 3. Add Rice Crispies and chopped nuts, mix well. 4. Sprinkle half of rice crispy nut mixture into a glass dish and flatten with a flat base bowl or clean moistened hands (12" wide, 1.5 inch deep) 5. Whisk the chocolate and peanut butter and pour into the dish, spread evenly 6. Add the remaining rice cirspy nut mixture evenly over the chocolate 7. Winter time is the perfect time to try new recipes. Besides the traditional cakes and pies during the holidays, pecan bars are a wonderful change and very easy to make for the entire family. This is also a good recipe to let the kids try out on the weekend.

This recipe remind me of growing up in Tennessee where my family grew pecan trees in our backyard. My grandmother Mamie, always picked pecans from the tree, then made her specialty homemade pecan pie. This recipe taste very similar to that but in a more quick and easy format.

Try this quick and easy recipe and watch these delicious pecan bars disappear right before your eyes. It's also an easy alternative to the traditional Southern Pecan Pie recipe. Add a new twist to an old Southern favorite, pecans. Your family will love it.

Quick & Easy Southern Pecan Bars

1 ¾ cups all-purpose flour

1/3 cup firmly packed brown sugar

¾ cup butter or margarine

1 cup firmly packed brown sugar

4 eggs, room temperature

1 cup dark corn syrup

¼ cup butter or margarine, melted

1/8 teaspoon salt

1 ¼ cups chopped pecans

Combine flour and 1/3 cup brown sugar. Cut in ¾ cup butter with pastry blender until mixture resembles coarse meal. Press mixture evenly into a greased 13x9x2 inch pan. Baked at 350 degrees for 15 to 18 minutes.

Combine 1 cup brown sugar and remaining ingredients except the pecans, beating well. Stir in pecans. Pour filling over prepared crust. Bake at 350 degrees for 35 to 40 minutes or until firm. Let cool, then cut into bars. Yield 15 to 20 bars. Enjoy!

Amazing Microwave Peanut Brittle

Printed recipe: www.usafireandrescue.com A fast and easy way to make delicious peanut brittle! Big thanks to Omar at www.youtube.com for sending this amazing recipe!!!! Ingredients 1 1/2 cups raw, shelled peanuts 1 cup sugar 1/2 cup light corn syrup 1/8 tsp salt 1 tsp butter 1 tsp vanilla extract 1 tsp baking soda Directions Generously butter a cookie sheet and set it aside. In a 2 qt Pyrex or microwave safe dish, add raw shelled peanuts, sugar, light corn syrup and salt. Stir together. Microwave on high for about 5 minutes. Remove dish from microwave and add butter and vanilla extract. (Be careful as dish will be very hot.) Stir until well blended. Microwave for an additional 2 minutes or so or until the mixture takes on a light brown brittle color. When the mixture gets to the desired stage, remove from microwave and add baking soda. Stir quickly. The mixture will become light and foamy. Quickly pour mixture onto the buttered cookie sheet and spread it into a thin layer. Let cool and then break into pieces to serve.
