Ingredients 1 1/2 cups raw, shelled peanuts 1 cup sugar 1/2 cup light corn syrup 1/8 tsp salt 1 tsp butter 1 tsp vanilla extract 1 tsp baking soda Directions Generously butter a cookie sheet and set it aside. In a 2 qt Pyrex or microwave safe dish, add raw shelled peanuts, sugar, light corn syrup and salt. Stir together. Microwave on high for about 5 minutes. Remove dish from microwave and add butter and vanilla extract. (Be careful as dish will be very hot.) Stir until well blended. Microwave for an additional 2 minutes or so or until the mixture takes on a light brown brittle color. When the mixture gets to the desired stage, remove from microwave and add baking soda.
